Healthy Fried Rice

If you’re anything like me you looove Chinese Food, and if the thought of giving it up to achieve your ideal waistline leaves you questioning your approach I don’t blame you!

Living a healthy fit life doesn’t have to mean depriving yourself of all the yummy-ness we have all come to love. Instead it should be about making healthy choices and improvising to meet your nutritional needs. I’m all about living life to it’s fullest, and that includes eating things that I enjoy.

Pictured above is one of my all time fav dishes…Egg White Veggie Fried Rice. It’s not only super easy to throw together, it’s healthy and FULL of flavor! Go on, try it for yourself.

You will need:

- 2 Cloves Minced Garlic

- 2 Chopped Scallions

- 1/2 – 1c Steamed Veggies (Pictured above is broccoli, I also love using green beans, kale, and whatever else I have prepped in the fridge)

- 2 – 6 Egg Whites (depends on how much protein you want or need)

- 1/2c Brown Rice

*I also add cashews and/or white fish or shrimp to switch it up (feel free to experiment and add chicken or beef)

How to:

In a pan spray non-stick cooking oil (I love using coconut oil spray). Cook garlic and scallions until lightly browned. Next add veggies and rice and mix. Once mixed make an opening in center (think volcano) and spray pan with non-stick cooking oil. Here I add the egg whites and cook for a couple minutes. Once 3/4 of the way cooked I mix EVERYTHING together and voilà! Healthy Fried Rice!
